Did some slow cooked pork country ribs this weeken

Did some slow cooked pork country ribs this weekend. My smoker is on the fritz again and I need to pull apart the control board. BUT I was able to use some chokecherry syrup available at every little mom and pop general store in Colorado, the sweet and tart syrup transformed with some garlic powder and paprika into an amazing finish.

Next time it deserves a proper smoke, but this was a great test drive. We finished it with some North Carolina style sauce from @heygrillhey -- honestly my favorite BBQ sauce style, and Susie makes a great one.

Spruce tip simple syrup ready for cocktails, ice cream flavoring, gummy bears, and more. The kids help me collect spruce tips late spring so that we can make tasty treats. High in vitamin C and easier when you have a few helping hands.

Had to stop for a picture on my drive back from camp the other day. Went up to work on our two back rooms and get the interior doors hung and just stare at the other things I have to do.

It's a labor of love, and this is why I do it. To be able to hang out in one of the prettiest places. Kremmling is just so damn diverse with accessibility to the mountains, the sagebrush sea, and those awesome cliffs. Love to be able to spend time here with the family.

You only get one chance per critter to cook the heart. Corozón de Alce Tacos last night for dinner. Elk heart 🫀🌮 tacos marinaded for twelve hours in @goyafoods Naranja Agria. It glazed up naturally over high heat for about 11 minutes total. Kiss it with some kosher salt, cube it and onto tortillas with some cheese and veggies.

Got my first elk on #publicland here in Colorado. Super jazzed, super sore from the pack out. Worth it!
